Triple Chocolate Oreo Chunk Cookies
It is getting close to time for all the goodies for the bus drivers, neighbors, cookie exchanges and more so I thought I would share a few recipes that I like to give away. First is the Triple Chocolate Oreo chunk Cookies. I got this recipe from the Cookie Cravings cookbook by Two Peas and their Pod. I haven't made all the recipes in their cookbook yet, but the ones that I have are delicious! Right now they are actually having an amazing sale on their cookbooks so if I were you I would get them! They are E-books, but still just as good. Then you aren't cluttering your cupboards with more books. After trying a recipe if I like it then I print it and add it to a three ring binder that I have for recipes that I like.
Here is the recipe:
TripleChocolate Oreo Chunk Cookies:
2 1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
3/4 cup dutch process cocoa
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
2 tsp vanilla extract
1 cup chopped white chocolate (or white chocolate chips)
1 cup chopped semi-sweet chocolate (or chocolate chips)
1 cup chopped Oreo cookies
1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or silpat baking mat. Set aside.
2. In a medium bowl, sift flour, baking soda, salt,and cocoa. Set aside.
3. With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract. Mix until blended.
4. Slowly add flour mixture to sugar mixture and mix until flour disappears. Stir in chocolate chunks and Oreos. Drop cookie dough by rounded table spoons onto prepared baking sheet about 2 inches apart.
5 Bake cookies for 8-10 minutes (I did 10 minutes) Don't over bake. Remove from oven and let sit on the baking sheet for 3-5 minutes. Move to a cooling rack and cool completely.
